Vitamin C participates in many enzymatic reactions (among others collagen synthesis, catecholamine synthesis, hydroxylation of steroids, tyrosine and exogenous substances), increases the absorption of iron salts, inhibits free radical chain reactions. Its antioxidant activity is in close biochemical relationship with the antioxidant effect of vitamin E, vitamin A and carotenoids.
